Tomorrow I’m having some of my favorite ladies over for brunch, but I haven’t quite solidified the menu yet – any suggestions?     I have 2 no fail bruch recipes that are easy to prep ahead of time. Google Pioneer Woman’s French Toast Casserole and Spoon Fork Bacon’s Baked Egg Boats. You make the casserole the night before and the egg boats an hour before your guests arrive and they can bake in the oven together. So good and simple. Add mimosas and an arugula salad and enjoy!

    I definitely agree with Megan – you can’t go wrong with the Pioneer Woman’s French Toast Casserole! Another favorite of mine from her is her “Woman’s Only” Quiche (found here: http://thepioneerwoman.com/cooking/2009/04/quiche/) – it’s to die for! Good luck with your brunch!
