Don’t get me wrong – I love frosting. LOVE it. And I’m a sucker for a classic white wedding cake (see Exhibit A). But there’s something so fun about these unfrosted wedding cakes! I love getting to peek at all the layers of yummy-ness! And really, if the cake and filling are delicious enough, the rest is just, well, the icing on the cake.

Oh my! How different!!! I depend on the outside frosting to cover up my sloppy layers, I’ll admit. This is super skill to make it look so perfect! =)
These naked cakes are fantastic and depending on the wedding style–would definitely consider them.
This is already happening at weddings in NYC, and will be at mine!

But a) I think someone missed the memo about frosting being delicious, and b) I’d be concerned about how this would affect freshness, both immediately, and after a year in the freezer.

Naked cakes are SO my thing! I’ve been saying so for years now, and I’m so glad it’s catching on. Momofuku’s noodle bar is fantastic, so I’m sure the milk bar is just as awesome!
