King’s Ransom :: A Fruity Sparkling Cocktail with Pimms and Strawberry

This week’s signature cocktail feels like pure summer to me—Pimm’s, strawberries and bubbles! Fennel adds some truly unique flavor to the drink, and the fronds make a great detail as a garnish. Serve it up tall with a strawberry on the side, and you’ve got the perfect thing to sip on a summer afternoon.

King’s Ransom
Glass: tall iced glass / Method: shake and strain / Garnish: fennel frond and strawberry half

2 oz. Pimms Liqueur
.5 oz. fennel honey syrup
1 oz lemon juice
1.5 oz. strawberry juice
Shake and strain
Top 1 oz sparkling mead
