Glass – flute
Method – shake & fine-strain
Garnish – slapped mint sprig; skewered dried apricot
• 1.5 oz. Pisco (we recommend Encanto Quebranta)
• .5 oz. Apricot Liqueur (we recommend Rothman & Winters Orchard Apricot)
• .75 oz. pineapple syrup
• .75 oz. fresh lime juice
• 1 dash Angostura Bitters
Shake well with ice; fine-strain into a Flute and top with just a splash of dry sparkling wine.
